KOMBUCHA MATTER

Kombucha Matter is Polly's most recent project. First recorded in China in 221BC and named Kombucha in Japan in 415AD, the fermented tea drink or 'tea of immortality' is becoming a bigger trend in western countries for it's pre-biotic qualities, a benefit to gut health.

To learn more about the process of making Kombucha, Polly visited JARR Kombucha brewery, based in Hackney Wick. Here, she discovered team members at JARR had made a leather like material grown from the Scoby during the brewing process.


Not waste, but a new method of growing material from a natural byproduct, Polly is currently exploring the material to see how it could be used in fashion, interior and product design.
